Leftover smoked turkey soup recipes that warm the soul and keep us full and satisfied are perfect for this time of the year. I love Thanksgiving for so many reasons but specifically for the turkey. But after that meal, what is there to do with the leftovers? Well, we make leftover smoked turkey soup!! I usually smoke a turkey, so the soup is flavored with all that great smokey flavor. We start with a large dutch oven, and we add all the turkey bones, legs, and wings plus a good bit of water. Then we let all that simmer for several hours to release all the remaining meat from the bones. A long slow simmer also releases all the smokey flavor into the broth. Next, we separate all the meat, bones, and skin from the broth. Once the meat is separated, we add our onions, celery, and carrots. After those have cooked down and softened, we add some sweet green peas to the mix. Once those have cooked for just 10 or 15 minutes, we then add our egg noodles. Let those soften. Grab a bowl and give it a try. I think you will love how great this soup is. It is so rich and thick; it's almost like a stew. One-pot! One great soup! And, that's our leftover smoked turkey soup!!
