Using a wooden spoon or spatula is best to protect your Dutch oven or any enameled cookware. You can use plastic, nylon, silicone, and rubber, but wood is the best, in my opinion. Never use a knife to cut anything in the Dutch oven, as this can scratch or chip the enamel, and this will cause it to rust.
