In this video, Mr. Cast Iron talks about how to tell if cast iron is seasoned or not. There are a few ways to do this. One is by sight. It should have a jet-black, shiny look to it. We call this patina. Another way is it should feel smooth to the touch. It shouldn't be rough or have burnt-on food caked on or carbon build-up. It should be greasy or rusty. Seasoning actually protects cast iron from rust. The next thing to look for is if it smells or not. If it smells, it is rancid oil, and you will have to deal with that. And the last thing to check for is if water beads off when you run water over the surface. If it beads up, that is the greatest indicator of a well-seasoned cast iron skillet.
